what's for dinner

Last night we had some friends over for dinner, so we threw some skirt steak on the grill and made fajitas. I wanted to make them more special than usual so i used rachael ray's peach salsa and made it into some mango salsa. It was delicious! 
Mango Salsa

1/2 of a red onion chopped
1/4 c. chopped cilantro
1 diced mango
2 jalapeno peppers diced
juice of two limes

Just mix it all up in a bowl and top your fajitas, quesadillas, tacos, and whatever with it. 

Then for dessert...



2 apples
5 marshmallows ( 1 quartered, 4 cut in half)
1 oz Mexican Chocolate finely chopped (this is just chocolate with cinnamon in it)
4 tbsp unsalted butter sliced thin
2 tbsp water

Preheat oven to 400F
Cut the apples in half length wise and scoop out the cores forming a small crater
Place a piece of quartered marshmallow in each, then divide chocolate among them
Place 2 tbsp of the butter over chocolate
Then place the remaining butter and water into a baking dish
Place apples in baking dish and bake for 30 min until softened

Then turn oven to broil, top apples with remaining marshmallow pieces and broil until tops are golden brown
Serve with juices in the bottom of the pan
