blueberry muffins via allrecipes
ingredients:
1 1/2 c. flour
3/4 c. sugar
1/2 tsp. salt
2 tsp. baking powder
1/3 c. vegetable oil
1 egg
1/3 c. milk
1 c. fresh blueberries
crumb topping:
1/2 c. sugar
1/3 c. flour
1/4 c. butter in thin slices (1/2 stick)
1 1/2 tsp. ground cinnamon
1. Mix dry and wet ingredients for muffin batter. I had to add an extra splash of milk to make it more like a batter. then fold in blueberries.
2. Drop into greased muffin tin
3. Mix crumb topping together with a fork, or use your hands as a faster method. Sprinkle generous amounts of topping over muffin batter.
4. Bake at 400 degrees for 20-25 minutes
