agh

I am too much of a wreck to blog, and I am sure I will be for a while. We just found out there is another offer on the home we want to purchase. So who knows what the outcome will be. I will probably be sane by Monday so enjoy the weekend.

cranberry sauce with orange

Yes this week is all about Thanksgiving. So enjoy yet another recipe.

cranberry sauce with orange for 10 (or 6 with leftovers)

12 oz fresh cranberries
1/2 an orange zested
2 cinnamon sticks
1 c. brown sugar
1 c. orange juice

In a medium sized saucepan combine all ingredients over high heat and add 1/2 c of water or more until the cranberries are covered. Once the mixture is brought to a boil, reduce the heat to med low and let simmer for an hour or until thick.

Let the mixture cool and refrigerate it in an air tight container.

If you have leftovers, my favorite thing to do is make a turkey cranberry panini.
Just layer leftover turkey, mozzarella slices, and cranberry sauce on bread and press in a griddle or pannini press to get things nice and toasty. Its a must with my family.

side dish three

what is thanksgiving without stuffing?! this is the recipe my family has used at every thanksgiving, and my dad won't have it any other way. i don't blame him either it's delicious!

strain family stuffing for 6

1 loaf white bread (i'm going to try an italian crusty loaf this year, but we usually use plain ol' white bread)
3/4 c. butter (1.5 sticks)
1 chopped onion
4 stalks chopped celery
2 tsp. poultry seasoning
salt and pepper to taste
1 c. chicken broth

Tip: when chopping the veggies and bread cubes make them equal sizes. you don't want huge chunks of celery with small chunks of bread. that's just annoying and someone could choke out of sheer surprise that there were huge celery chunks in their stuffing. i made that up...

How To:

Let the bread air dry for 2hrs or you can toast both sides lightly under the broiler.
Cut into cubes.
In a large saucepan melt butter, add onion, celery, and seasonings. cook until soft
Stir in bread cubes and chicken broth.

Make the day before and chill. then the day of stuff the turkey with it or bake in a dish at 350 for 30-40 min.

side dish two

haricots verts with bacon. what do you do to a healthy side dish on thanksgiving? add bacon!

side dish one

mashed potatoes are a staple in kevin's diet, so i usually experiment with my mashed potato recipes from year to year for thanksgiving. here is the one i am going to try this year.

so i finally got my gocco printer in the mail today, and guess what... the usps man/ woman knocked once and immediatly left leaving a note on my door. I WAS HOME!!! i took less than 10 sec to get to the door and they were already gone. now i have to wait a day to go pick it up from the post office. blurg.

but on a good note, i will be house shopping this weekend. which means a ton of pics to share with you all, as well as some future interior design inspiration as i fix up the place :)
